Christmas is just a few days away and you can feel the excitement in the air. Christmas is a time for family, gifts, love and also new recipes. Nothing says celebration better than food, especially deserts.
Our family is no different than any other and we partake in the festivities. During the holiday season, we usually have several visitors coming to visit us, so it is necessary for me to always have something ready to serve my guests. Nothing fancy. Just something to nibble on as we spend time with one another. I have found that something sweet is always welcomed by our guests and especially my husband!
For this holiday season, I am serving blackberry yogurt and chocolate muffins. Although skeptical, I have always wanted to bake with yogurt and I have to say that I was pleasantly surprised by the texture and taste of these muffins.
Blackberry Yogurt And Chocolate Muffins
Serves 12
Ingredients
2 cups all wheat flour
180g sugar (12 spoons)
½ Tsp salt
1Tsp baking soda
1 Tsp baking powder
1 cup fruit cocktail yogurt
2 eggs
90 ml oil
60 ml milk
1 cup fresh blackberries
30g Creamy white chocolate
Method
Preheat oven to 180C.
Combine, flour, sugar, baking powder, baking soda and salt in a bowl. In another bowl, whisk yogurt, eggs, milk and oil. Stir in the dry ingredients until just moistened. Lastly, fold in the blackberries. Fill paper-lined muffin cups three-fourths full. Bake for 20 minutes or until a toothpick comes out clean. Transfer the muffins to a rack and cool. Melt the chocolate, and drizzle on top of the muffins and wait for the chocolate to set. Serve and enjoy!
