Have ever wondered how easy and quick a vegetable stir-fry can be??  It’s a simple:  peel, cut and chop chop!

This dish was inspired by a vegetarian lady I met at an event. We touched on the topic of healthy living, how has it been for her as a vegetarian and how beneficial it has been for her physically and mentally.

I was inspired and reminded of the importance of taking care of our body, making healthy food choices. So today I just felt like preparing this quick healthy vegetable stir-fry.

It’s quick to prepare, simple, healthy and exciting!  What don’t you try it? It goes well with Ciabatta bread or any healthy bread of your choice.

Ingredients:

Carrot sliced into Julienne strips

Baby marrows, thinly sliced

Red, yellow and green peppers,  thinly sliced

Onion, thinly sliced

Salt and pepper

Dried Italian herbs

1tbsp olive oil

Preparation:

Heat oil on medium heat, stir-fry onion and carrots first until the carrot becomes soft.  Add the rest of the ingredients.

Stir -fry for 3 to 4 minutes.  Season with salt and pepper and Italian herbs.
