My household loves these muffins, they are perfect for waking up to on busy, cold, winter mornings.

These muffins are so easy to make, differently delicious and filling. They are tasty and moist, packed with wheat bran, fresh carrots and are plump full of raisins. It is just a few minutes of work and your breakfast is sorted for days. I love baking them during the winter season; I enjoy them with a cup tea especially after a long day at work, a quick idea to warm me up as I decide what to cook for dinner (I try to avoid doing this every day though hahaha!)

I like using brown instead of white sugar.

Try them out, their comforting flavours pair perfectly for a lovely morning treat for the winter season. Say bye to missing breakfast!

Ingredients

Makes 12 muffins

1 ½ cup wheat bran

1 cup all-purpose flour

1 egg

1 cup milk

2/3 cup brown sugar

1//3 cup vegetable oil

½ tsp vanilla essence

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

½ tsp salt

1 medium carrot, shredded

¼ cup raisins

Method

Preheat oven to 200 C

Mix together wheat bran and milk; let it rest for 10 minutes in a mixing bowl.

Beat together the egg, oil, sugar, and the vanilla essence. Then add to the bran mixture.

Sift together the flour, baking soda, cinnamon, salt and baking powder.

Stir the flour mixture into the bran mixture, until just blended.

Fold in carrots and raisins, then spoon the batter into prepared muffin tins or muffin paper cups

Bake for 15 to 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
